Summer of pico de gallo


We’re making a lot of pico de gallo this summer. I don’t know what it is, but the fresh produce lends itself to the best flavors in pico de gallo. AdRi insists on her pico de gallo in the most purest of manners. No extras. It’s straight tomatoes, onions (white), cilantro and jalapenos. That means no lime in there. Or radishes. You can have those things on the side, but not IN the pico de gallo. We’ve been growing our own cilantro, seeding every few weeks, so we always have fresh cilantro. And soon, the tomatoes will be from our own garden. In the past we’ve gone through phases (read: I’ve) of making salsas. But pico de gallo? It’s a staple. Viva la pico de gallo!
